I have a tip to share, too: when using coconut oil, it should be just melted, barely warm, and definitely not hot. Let it cool if you need to, before adding the other ingredients. Cocoa nibs vs. Cacao nibs

Sometimes I do all coconut oil. When you use Coconut Oil — in whatever quantity — small or large — the chocolate must be kept in the fridge or frozen. Especially if you have a warm environment.
